Hot honey

Ingredients

• 1 cup honey
• 2 tablespoons red pepper flakes (or 3-4 fresh chilies, sliced)
• 1 tablespoon apple cider vinegar
• Pinch of salt

Method

1. Combine the honey and pepper flakes in a small saucepan over medium-low heat.
2. Bring to a bare simmer — small bubbles at the edge, never a boil — and hold it there for 5 minutes so the heat steeps in.
3. Pull the pan off the heat and stir in the vinegar and salt. Let it sit 10 minutes (longer for more heat).
4. Strain into a clean jar if you want it smooth, or leave the flakes in if you want it to keep getting hotter. Keeps at room temperature for a month, or refrigerated for three.
