This cranberry sauce is fresh cranberries simmered in orange juice with honey as the only sweetener, and the honey does more than sweeten. It softens the berries' sharp edge with a round, floral note that white sugar never brings, and it gives the finished sauce a glossy, jammy body. It takes one pot and about 20 minutes, and it is better made a day or two ahead.
We reach for a light, mild honey here, the kind our hives on the Libertyville campus tend to make. A darker honey works too; it just pushes the flavor toward molasses. Either way, taste at the end and adjust, because cranberries vary in tartness from bag to bag.
