Late July in Libertyville means the grill is hot most nights and the hives out on our campus are at their busiest. This is what we cook with both — chicken thighs that go on plain and come off lacquered and sticky, with a little char at the edges.
The glaze is six pantry ingredients and it does not ask much of you, but it does ask for timing. Honey burns fast over open flame, so it waits until the last few minutes on the grill, when it has just enough heat to caramelize and not enough to scorch.
